Lalvin 71B-1122 is a semi-dry wine yeast that is recommended for bringing out fruit esters and enhancing natural fruit flavours. Also known as the Narbonne strain, this particular strain is perfect for floral wines and light fruit wines.
71B-1122 is a low foaming yeast with a very rapid start time. Produces a smooth wine and enhances aromatic qualities in the must, low amounts of phenols are extracted from the must which means the wine will mature quicker than those fermented with other strains. Well suited to white wines, roses and nouveaus. 71B also softens wines with high acid content by metabolising between 20- 40% of malic acid in the must.
Alcohol tolerance is up to 14% and the ideal fermentation range is between 15°C – 30°C
