Saison Dupont Clone Recipe
Saison Dupont is probably what most drinkers consider the quintessential Saison.
If one beer sums up a beer style then Saison Dupont does this, although Saison as a style in itself is quite wide-ranging in what is acceptable for the flavour profile, colour and yeast.
Brasserie Dupont was originally a farm and beers would have been produced on the farm to be consumed by farm workers after working in the fields during the warmer months. The brewing of the beers happens in the colder months so the fermentation temperatures wouldn’t get too high. This is where the name “Saison” is derived as it is a seasonal beer.

To brew a malt extract version of Saison Dupont substitute the Pilsner malt for the following:

Farmhouse Beer – Saison
Saisons are often described as ” Farmhouse beers” this is because, before commercial production, they would have been brewed on farms for consumption by agriculural workers.
Brasserie Dupont the brewery that makes Saison Dupont was originally a farm that was bought by the Dupont family in the 1920’s. The brewing of “season” beers continued with much the same recipes.
Saison as a beer style can be quite varied, traditionally the methods and ingredients would have varied from one farm to the next and yeast strains would inevitably vary and become unique producing sometimes sour of funky beers.

Recipe Notes
- Michael Jackson the beer writer described the beer as being made from entirely Pilsner malt and hopped with East Kent Golding and Styrian Golding in two addition.
- Similar recipe notes can be found on various forums – HBT, HBT
- Wyeast 3724 or White Labs 565 are generally accepted as close to the Saison Dupont strain. They can be quite tempremental and seemingly stall so need monitoring closely. Alternatively you could culture bottle dregs from Saison Dupont bottles to ferment the beer with.
